Lester's Bison Farm

 

I was first introduced to the buffalo while in the Marine Corp. My commanding officer chose me to head up a survival training course. The buffalo were used as a training tool; many thought the animal was a stupid wooly beast, when in reality they are really smart creatures. There is always a “Head of the Herd” that leads and takes care of the herd. These animals lead with their brains not their brawn.

I retired in 1972; and the following year I bought my first four buffalo and started breeding and building the herd. Today, I have about 65 animals on my farm south of Burlington , and 1500 on the ranch in South Dakota . So why buffalo? There are four main reasons. 1) The TASTE is great! It is very flavorful, slightly sweet and can be used in any red meat recipe without special handling. 2) The VALUE of buffalo meat is not what you pay for it, but what you get in return. Nutritionally, buffalo meat has more protein and nutrients with fewer calories and less fat. Buffalo is a dense meat that tends to satisfy more while eating less. 3) For your HEALTH, bison are not subject to hormones or stimulants and, 4) research show that buffalo is a highly NUTRIETENT dense food because of the proportion of protein, fat, minerals and fatty acids to its caloric value.

My favorite part of what I do is meeting the customers. I love coming to the Thursday Burlington farmers' market as well as serving customers at my farm store.
